Finnigan’s White Paw Hard Soda

Written for our friends Alex and Logan’s wedding in Hawaii, this hard soda is a deliciously simple recipe, designed to be enjoyed long, over ice, in the sun. As a batched recipe it’s perfect for preparing ahead of time for your own party or celebration. It’s also an approachable, lower ABV cocktail recipe, about the same strength as a premium lager.

Nutty and creamy profiles come from cold brewed oolong tea, along with a hint of botanical complexity from gin. There’s no added sugar, just a little natural sweetness from pineapple juice, balanced with crisp acidity from fresh lime juice. Read More





  • 30 ml GIN (1 parts)
  • 150 ml SPARKLING OOLONG TEA (5 parts)
  • 60 ml PINEAPPLE JUICE (2 part)
  • 7.5 ml LIME JUICE (1/4 part)

How to make it

  • 1 – Make sure all ingredients are in the fridge and ice cold, the gin can also be stored in the freezer.
  • 2 – To reduce the number of times you need to move liquids between containers, have one extra bottle to hand than you need to use for the number of drinks you’re making.
  • 3 – Measure sparkling water into the bottle(s) you’re using for your batch. Tilt the bottle to make the pouring as smooth as possible in order to agitate the water as little as possible to minimise loss of gas.
  • 4 – Add Oolong tea leaves to the bottle(s) of sparkling water and brew overnight in the fridge with the lid on to keep carbonation in.
  • 5 – Squeeze lime juice and finely strain it to remove any solids, then keep in the fridge until ready to use.
  • 6 – Gently pour the tea through a fine mesh tea strainer from one bottle into an empty one (this is where having the extra bottle helps). Repeat the process for every bottle of cold brew. This should leave you with bottle(s) approx ⅔ filled with golden sparkling oolong tea, strained and ready for the other ingredients to be added. Plus one empty bottle filled with tea leaves.
  • 7 – Mix together all the gin, lime juice and pineapple juice in a large container. Mixing together all you need for all the drinks you are making will ensure you get better consistency across all your serves.
  • 8 – Pop the lid off each bottle of sparkling tea and measure in the gin, lime and pineapple mixture. As with all the processes. Tilt the bottle and do this as gently as possible, to agitate the mixture as little as you can and keep as much carbonation in the drink as possible.
  • 9 – Store all bottles in the fridge or an ice bucket until ready to serve.
  • 10 – Serve over ice and garnish with a dried pineapple and lime wheel.
