Like the Collins, you can throw in fresh berries, fresh herbs or use flavoured syrups and shrubs to add a unique spin on this classic. It’s a delicious drink in its own right, but it’s also a brilliant blank canvas onto which you can add your own take.
Ingredients
- 60 ml GIN (2 parts)
- 20 ml LEMON JUICE (2/3 part)
- 10 ml SUGAR SYRUP (1/3 part)
- 120 ml SPARKLING WATER (4 parts)

How to make it
- 1 – Add all ingredients, except for sparkling water to a shaker.
- 2 – Fill shaker with ice and give a short sharp shake then strain into a small, narrow, tall glass.
- 3 – Add sparkling water.
- 4 – Garnish and serve.
