Mai Tai (Royal Hawaiian)

This recipe travelled from California to Hawaii in the 1950s, and so the story goes, it was first served at the Royal Hawaiian Hotel.

Set right on the beautiful Waikiki Beach in Honolulu, the Royal Hawaiian Hotel has been making different versions of the Mai Tai ever since.   • 30 ml LIGHT RUM (2 parts)
  • 30 ml DARK RUM FLOAT (2 parts)
  • 15 ml ORANGE CURAÇAO (1 part)
  • 15 ml ORGEAT (1 part)
  • 30 ml FRESH ORANGE JUICE (2 parts)
  • 60 ml FRESH PINEAPPLE JUICE (4 parts)

How to make it

  • 1 – Add all ingredients except Dark Rum to a large tumbler and use a spoon to ensure the ingredients are well mixed.
  • 2 – With no lemon or lime juice in the recipe it’s really important that the fresh orange and pineapple juices are quality fresh juices that will bring a little acidity to the drink and ensure it doesn’t become overpoweringly sweet.
  • 3 – Drizzle the dark rum over the top of the drink to create a dark layer on the top of the drink.
  • 4 – Garnish…and we say yes to the Parasole! But we have to say NO to a glacé cherry, use a delicious maraschino cherry instead.

  • Normally we just tell you how to make cocktails, but we have a few tips to get the best experience out of this cocktail.
    Squeeze the wedge of lime into the drink and drop it in – it benefits from a splash of acidity
    Now pick up the umbrella and dunk the pineapple wedge into the drink to mix it all together
    Sip your cocktail and bite into your rum soaked pineapple…and relax!
    Don’t forget to eat your delicious maraschino cherry before you finish your drink. The sweet nutty cherry flavour pairs perfectly with the drink, so eat it before you run out!
