Red Gibson

The classic Gibson calls for pickled onions to garnish a gin Dry Martini, but these red wine pickled onion bad boys are not your typical pickled onions!

This Gibson version was inspired by some of our favourite bars in New York and London and the excellent Gibson variations made there. 

The drink itself is a fairly typical Gibson, in other words, Gin and Dry Vermouth stirred down together and served with small pickled onions. The difference to this drink is all in the onions, and if you’re serious about Martinis, we think it’s well worth the effort.

Ingredients 

  • 60 ml GIN (2 parts)
  • 30 ml DRY VERMOUTH (1 part)

How to make it

  • 1 – Add gin and vermouth to a mixing glass. We recommend a 2:1 ratio, but it’s really up to you, and as this drink’s focus is on the onions, you can always use vodka if that’s your Dry Martini preference.
  • 2 – Fill mixing glass with ice and stir until ingredients are ice cold and perfectly diluted.
  • 3 – Strain into a cocktail glass and garnish with a pair of the pretty red wine pickled onions.

  • 60ml 2 oz Full Bodied Red Wine
    120ml 4 oz Red Wine Vinegar
    60ml 2 oz Filtered Water
    45 ml 1 ½ oz Sugar
    2 tsp Salt
    ½ tsp Celery Salt
    ½ tsp Coriander Seeds
    200g 7 oz Peeled Pearl Onions
  • 1 – Add all ingredients, except for onions, to a pan and mix together to dissolve salts and sugars.
  • 2 – Bring mixture to the boil then allow to cool.
  • 3 – Peel onions and add to a sterile glass jar then cover them with the mixture.
  • 4 – Seal the jar and refrigerate.
  • NB: If you’re a little short on your mix, use the same ratios and mix together the liquid elements with salt and sugar (no need to add more spices) to ensure you completely fill the container.
  • 5 – Although pickling was a way to preserve fresh ingredients before we had refrigeration, we still keep ours in the fridge for maximum crunch. You also want a nice cold crisp onion to go into your icy Dry Martini, not a warm one!
  • 6 – Ready to eat in 1 ½ – 2 weeks.
