
“Oranges and lemons say the bells of St. Clements”. This is certainly not the first lemon and orange cocktail to be called a St. Clements, but it most likely is the first version to include the delicious toasted cereal notes from a soda flavoured with Soba-cha (see bottom of page for simple instructions of how to make it).
Soba-cha is a Japanese infusion (also drunk in other Asian countries under other names) of toasted buckwheat that can be used and enjoyed in place of tea, but without the caffeine. We use the Japanese name, as it was a time in Japan that first made us aware of this delicious ingredient many years ago.
Although it uses a typical Japanese ingredient, this Vodka St. Clements recipe was actually Inspired by the refreshing traditional orange barley water drunk at Wimbledon. It’s a simple and refreshing highball cocktail that’s full of flavour, with no added sugar. A perfect refresher that’s an elegant crowd pleaser.
Ingredients
- 60 ml VODKA (1 1/2 parts)
- 10 ml FRESH LEMON JUICE (1/4 part)
- 30 ml FRESH ORANGE JUICE (1/3 part)
- 120 ml SOBA-CHA SODA *see below for recipe. (3 parts)

How to make it
- 1 - Add all ingredients to a highball.
- 2 - Fill glass with ice, garnish and serve.
- To Make Soba-cha Soda
- You have a few options here to make this very simple tasty soda. The measurements are a guideline, about 1 Tsp. per 350ml of water.You can scale up or down depending how much soda you want to make
- V1. Ingredients2 Tsp Soba-chaApprox. 700 ml / 24 oz Filtered Water
- 1 - Infuse water with Soba-cha:Add Soba-cha to cold water and leave to infuse overnight in the fridgeORUse hot water to infuse more quickly, then allow it to cool before chilling.
- 2 - Strain out the Soba-cha and carbonate (Sodastream or other carbonating equipment).
- V2. Ingredients3 Tsp Soba-chaApprox. 1L / 34 oz Sparkling Water
- 1 - Open a bottle of sparkling water and tip out around ½ oz or 15ml.
- 2 - Gently add the Soba-cha directly to the bottle, replace the lid and put it into the fridge to infuse.
- To serve either:
- A. Gently strain out the Soba-cha, rebottle the flavoured sparkling water and seal to avoid losing carbonation. Place in the fridge until ready to use.
- B. If you’re serving straight away, you can pour the Soba-cha soda straight from the bottle and into your drinks. Simply pass through a fine strainer into the glass to avoid any pieces of Soba-cha getting into your drink.
